36211 – ETHIOPIA SIDAMA 2 FTO GIDIBONA SHEICHA ECOTACT is sourced from family owned farms organized around the Gidibona Sheicha Cooperative located in the district of Aleta Wondo within the Sidama Zone, Southern Nations Nationalities, and Peoples’ Region, Ethiopia. The Gidibona Sheicha Cooperative joined the Sidama Coffee Farmers Cooperative Union (SCFCU), an umbrella organization established 2001 to support a sustainable coffee supply from cooperatives in the Sidama region. SCFCU supports forty-six cooperatives with more than 80,000 farmer-members. The green coffee is somewhat less dense than some of the other offerings we’ve seen from Ethiopia this season, but still above average for the majority of arabica.

Due to its slightly lower than normal density and moisture, it does not take a big push of heat to get 36211 – ETHIOPIA SIDAMA 2 FTO GIDIBONA SHEICHA ECOTACT deliciously past first crack. Charging at 375.5 °F is slightly lower than I normally charge for a washed Ethiopian coffee. With just minimal heat, the coffee wanted to race to first crack. As the curve began to plateau, a small bump in heat was all that was needed to push this coffee to my desired end temperature. In the cup we tasted vibrant lemon, cherry and apple with notes of vanilla and honey.
