36336 – Ethiopia Sidama 2 FTO Bokasso Ecotact is sourced from family owned farms organized around the Bokasso Cooperative located the district of Wonsho within the Sidama Zone, Southern Nations Nationalities, and Peoples’ Region, Ethiopia. The Bokasso Cooperative joined the Sidama Coffee Farmers Cooperative Union (SCFCU), an umbrella organization established 2001 to support a sustainable coffee supply from cooperatives in the Sidama region. SCFCU supports forty-six cooperatives with more than 80,000 farmer-members. This particular lot has a near-ideal moisture and water activity one-two punch, and a moderately high density. We picked up a lot of complexity on the cupping table, but in particular 36336 – Ethiopia Sidama 2 FTO Bokasso Ecotact really highlights the lemony acids we’ve come to expect from great Sidama coffees, bolstered by juicy flavors like peach and a clean chocolate finish.
Although 36336 – Ethiopia Sidama 2 FTO Bokasso Ecotact has relatively high density, our first roast, PR-0169 was too aggressive with the charge temperature and the overall roast curve. The lower charge temperature and heat application just before the drying stage completed allowed for a more gradual incline and brought more clarity and sweetness in the cup.
